Baked Rice Pudding

As usual, I used a simple recipe – simple but tasty. There are fancier puddings available, but this one is easy enough for you to let your kids make it. That may encourage them to eat more rice.

Preheat oven to 300 degrees F. In a pot or dutch oven of three-quart size or larger, mix together the rice, milk, and sugar. Bake uncovered in the oven for two hours. Stir in the raisins and vanilla. Bake at 300 for another 30 minutes. Sprinkle with nutmeg and cinnamon, stir. Let cool and serve.

If you want a thicker pudding, reduce the milk to 4 cups or 1 quart. This will allow you to use a two-quart sized pot.
