Portugese Linguiça Sausage

• 1 pound pork butt, untrimmed
• 2 cloves garlic, minced
• 2 teaspoons paprika
• 2/3 teaspoon salt
• 1/4 teaspoon ground cinnamon
• Ground spices:
  • 1/2 teaspoon cayenne pepper
  • 2/3 teaspoon ground coriander seeds
  • 1/4 teaspoon allspice
  • 1/4 teaspoon black pepper
• 2 1/2 teaspoons white wine vinegar
• 5 teaspoons cold water

After mixing ingredients together, cover and refrigerate at least 48 hours to allow the flavors to blend.
