Oatmeal Chocolate Chip Cookies

Ingredients

In a small-to-medium bowl, whisk together flour and baking soda; set aside. In a much larger bowl, combine butter, white sugar and brown sugar; stir (or use a mixer) until light and fluffy. Add salt, vanilla, and 1 egg. Stir until well mixed. Add flour mixture; mix until almost combined.

Stir in the oats and chocolate chips. Chill dough for one hour to overnight.

Preheat oven to 375 degrees Fahrenheit. Grease two to three 8-inch (#5 size) cast iron skillets. Place a ball of cookie dough in each cast iron pan.

Bake at 375 degrees until cookies are golden around the edges, but still soft in the center, 8 to 10 minutes. Remove from oven, and place the pans on trivets or on the stovetop to cool. The cookies will continue baking for a few minutes as they cool.
