Crush the Ritz crackers into a fine powder. Clean mushrooms. Chop up the small mushrooms; scrape out the insides of the portabella mushrooms. Mix together the onion, garlic, and chopped mushrooms; add the butter on top. Stir the mixture together and melt the butter into it. Remove from heat and add the Ritz crackers, cheese, olive oil, pepper to taste. Mix everything together well; if mixture is to dry add more olive oil or butter. Stuff each mushroom with the stuffing mixture and place in a baking dish. Cover with foil. Bake at 350 degrees for 20 minutes, remove cover and bake 10 minutes longer until browned on top.
